Vegan Egg Salad Sandwich

Here is my wonderful recipe for my easy vegan egg salad sandwich.  This is such a great dupe for the real thing.  My favorite part is that it takes less than 10 minutes to make.

I’ve made this for a few of my dairy loving family members who were very pleasantly surprised by this flavor.  I’ve been making the recipe for years but it wasn’t until I started using black salt that this recipe got its true eggy flavor.

Ingredients:

Tofu – This acts as the egg.

Green Onions – This adds great flavor and texture.

Vegan Mayonnaise – The mayonnaise binds everything and makes it creamy.

Mustard – This adds a great flavor as well as an eggy color.

Black Salt – This gives everything an eggy flavor.

Turmeric – This adds flavor and color.

Garlic Powder – The garlic powder adds great flavor.

Nutritional Yeast – This adds thickness and a rich dairy flavor.

Vegan Egg Salad Sandwich

Ingredients

Salad

  • 1 block Firm tofu
  • 1 Green onion chopped

Dressing

  • 1/4 cup Vegan mayonnaise
  • 1/2 tbsp Black Salt
  • 2 tbsp Nutritional Yeast
  • 2 tbsp Yellow mustard
  • 1/2 tsp Turmeric
  • 1/4 tsp Garlic powder

Instructions

  • Gently pat your tofu with a paper towel l to soak up excess liquid.
  • Cut your tofu into 1/4th inch cubes. Chop your green onions as well.
  • Place your tofu, green onions and everything else into a large bowl. Stir until everything is completely mixed together with the tofu.
  • Add your mixture to toasted bread and enjoy.
